Cinnamon bun caramel puffcorn by @shanniesharesfood
1 cup (2 sticks) butter
1 1/4 cups brown sugar
2/3 cup light corn syrup
1 tsp baking soda
1 tsp ground cinnamon
1 tsp vanilla bean paste or vanilla extract
7oz Like Air Cinnamon Bun Puffcorn
In a large pot over medium heat, add butter, brown sugar, and corn syrup. Melt, stirring constantly, until well combined and boiling. Once boiling, turn down to a medium low heat and allow to boil undisturbed for 3 minutes.
While mixture is boiling, grease a large roasting pan and add the puffcorn.
After the 3 minutes of boiling, remove the caramel mixture from the heat and stir in cinnamon, vanilla, and baking soda. This mixture will foam up quite a bit from the baking soda, so make sure you have a large enough pot to allow the mixture to almost double in height.
Pour the caramel mixture over the puffcorn and stir to coat evenly. Bake in a 250° oven for 30 minutes, stirring every 10 minutes. Once baked, pour onto a waxed paper lined and lightly greased rimmed baking sheet and allow to cool completely. Once cooled, break into bite sized pieces and store in an airtight container.
